Savory Salmon Cakes
Need a new way to prepare salmon? Try this recipe that is quick, healthy, gluten free and delicious! Pair it with a salad or green beans and a dinner roll and you have a wonderful meal.

- Stir together salmon, eggs, onion, lemon juice, in a bowl until well combined. Shape into 8 patties and coat each patty with the oatmeal flour, pepper and dill.
- Heat oil in a very large skillet over medium heat. Add salmon cakes; cook about 5 minutes per side, until golden and an instant-read thermometer inserted into thickest parts registers 160º F.
- Serve garnished with lemon wedges and parsley. Enjoy!
