If you are looking for a festive and fresh salad to serve for St. Patrick’s Day, look no further. The salad I am sharing with you today is green, healthy, and delicious! It may not be traditional vegetables used in Irish cooking, but its emerald hue is perfect to serve alongside heavier traditional Irish foods for a festive meal. I include spinach as the base green, apples and kiwi for sweetness, asparagus because it is coming into season, avocado for richness and a light lime dressing. It is all so delicious together and this salad is packed with nutrients, so feel free to eat a large serving! If you want the cute little shamrock shaped fruit, a cookie cutter is required. You just cut the shapes out from the sliced fruit and add them to the salad.

- In a large bowl, combine the spinach, onions, asparagus, kiwi, pears, and avocado.
- In a smaller bowl, whisk together the lime juice, avocado oil and sea salt.
- Pour the dressing over the salad in the bowl, and toss with hands until everything is coated in dressing and evenly distributed, being gentle so you don’t break up the fruit.
- Transfer to a serving dish, and enjoy!
