Shoreview Birthday Cake

If you were able to share in our celebration of 11 years, chances are you enjoyed a piece of cake for the birthday party. The two choices were Down in the Valley gluten-free chocolate cake or the in-house bakery made chocolate and vanilla cake. The deli is receiving lots of request to get the recipe of the in-house made cake. Well, here it is for your next celebration.

Ingredients

• 1 box Dr. Oetker vanilla cake mix (available in the baking aisle)
• 1 box Dr. Oetker chocolate cake mix (available in the baking aisle)
• 1 cup Spectrum all vegetable shortening
• 1 cup Spectrum butter flavored shortening
• 8 cups Wholesome Sweeteners organic powder sugar
• 1/2 tsp. sea salt
• 6 fl. oz. Cedar Summit organic heavy cream
• 1 1/2 Tbsp. Simply Organic almond extract
• 1 Tbsp. Simply Organic vanilla extract

Instructions

Prepare cake mix as directed on the box.

Cream shortening until fluffy. Add confectioner’s sugar and continue creaming until well blended.

Add salt, vanilla, and whipping cream blend on low speed until moistened. Add additional whipping cream if necessary (up to 2 ounces). Beat at high speed until frosting is fluffy.
