Slow Cooker Garlic Parmesan Chicken

Looking for an easy, delicious slow cook chicken recipe? Look no further.  This garlic parmesan chicken with potatoes is soooo good.  All you need to do is to add a green vegetable or salad to this dish and you have your meal.  The chicken melts off the bone and the potatoes are heavenly. Enjoy!

  1. In a large skillet over medium-high heat, heat 2 T olive oil. Add chicken, and season with salt and pepper, and sear until golden, 3 to 4 minutes, then flip and sear 3 minutes more.
  2. Meanwhile, in a 6-quart slow cooker, toss potatoes with the remaining 2 T oil, butter, garlic, and thyme. Season with salt and pepper.
  3. Add chicken to the slow cooker and toss gently, then cover and cook on high for 4 hours or on low for 8 hours, until potatoes are tender and chicken is fully cooked.
  4. Garnish with parsley and parmesan and serve.

For those who are limiting their sodium intake, substitute the salt for other salt-free seasonings.
