Spaghetti Squash Chicken Parmesan

Recently my mother completely changed her eating habits and it has inspired me to do the same. I love pasta, however I have decided that I want to cut down on how often I eat it. What to do when I’m craving spaghetti or one of my favorite dinner’s chicken parmesan? My mom made a recipe of baked spaghetti squash with chicken and marinara sauce and it was easy and delicious! I thought I’d share with you my take on the same dish with my own twist!

Preheat oven to 350 degrees.
Cut squash in half lengthwise and remove seeds and fibers with a spoon. Season the squash with salt and pepper and place on the baking sheet cut side up. Bake the squash for 1 hour and remove from oven. Once cooled, take a fork and scrape the squash into “spaghetti” like strands and season with a little more salt and pepper to taste.
Meanwhile, in a large skillet over medium high heat place 2 tablespoons olive oil. Season the chicken breasts with salt and pepper to taste and place into the pan. Cook for 4-5 minutes per side until internal temperature of chicken reaches 165 degrees. Allow chicken to cool and then slice into bite sized pieces and toss in the dried basil and minced garlic and mix until well incorporated.
In a sauce pot over medium low heat pour in the marinara sauce and heat; then add in the parmesan cheese whisking until well incorporated.
To assemble pour ¼ cup marinara sauce into each squash then top with the chicken pieces. Top with the remaining marinara sauce and then finish with the mozzarella cheese. Return the squash to the oven and bake for 10 minutes. Top with fresh basil or parsley if desired.
