Sparkling Pomegranate Cocktail

I like to enjoy something sparkly as I ring in the New Years, but what I don’t like is the sugary stuff most people put into cocktails.  I prefer to make my own with healthy ingredients such as real fruit juice and herbs.  The cocktail I am sharing with you today is simple to make, healthy, and it can be made non-alcoholic. I use heart healthy pomegranate and vitamin c rich orange juice to sweeten, and add in a bit of mint because it goes so well with fruit and it makes the drink fragrant.  You can top it off with either sparkling water or sparkling wine, whichever you prefer!  Happy New Year!

Instructions

For the drink, add the mint leaves and a few ice cubes to a martini shaker, and muddle together (with the end of a wooden spoon), then add other ingredients except the sparking water or wine. Place the lid on and shake. Strain into a martini glass, and top off with the sparking water or wine. Garnish with some pomegranate seeds sprinkled into the drink, and mint leaves on top and serve!
