Spicy Tomato Avocado Pasta Salad

Tomatoes are so good and flavorful this time of the year!  If you grow them in your garden, you are lucky, but if not you can get them at Fresh and Natural foods!  The cherry tomatoes are my favorite, especially for using in salads, because all you have to do is cut them in half.  The pasta salad I am sharing with you today features them, along with creamy avocados in a creamy delicious garlic sauce and spicy jalapenos.  It is a quick and easy dinner that you can get on the table in about 30 minutes, and not only that, it is delicious too!  It also happens to be gluten free because it is made with a high protein lentil pasta and vegan because that creamy sauce actually contains no dairy!  So, the next time you are in the mood for pasta salad, give this a try!

  1. In a large bowl, combine the tomatoes, avocados, cilantro, jalapeno and pasta.
  2. In a smaller bowl, whisk together the sauce ingredients.
  3. Toss the sauce with the veggies and pasta, and serve!
