Spring Pea and Asparagus Salad with Maple Almond Dressing
Spring is here! And it is the perfect time to use seasonal produce in recipes! This Spring Pea and Asparagus Salad is easy to make, delicious and healthy! It has a creamy almond butter dressing with maple and a touch of lemon and it makes a great side dish to any Spring meal!

- In a large bowl, combine the peas, asparagus, shallots, and green onions.
- Whisk together the almond butter, lemon juice, maple syrup, sea salt and water until smooth. If it seems too thick add a little more water (by the Tbsp) it should be the consistency of a creamy dressing.
- Pour the dressing over the vegetables in the bowl, and mix together until the vegetables are coated.
