Strawberry Avocado Quinoa Salad
Strawberries aren’t just for dessert. They are amazing in salads too! I love them combined with avocado and fresh herbs, which is why I created this strawberry avocado quinoa salad! It is substantial enough to be a main dish, because the quinoa has fiber and protein, and the avocado adds heart healthy fats to keep you satisfied longer. I dress it lightly with lemon juice and olive oil and it is just enough to bring out all of the flavors without overpowering them. This is so good this time of the year when strawberries are in season and plentiful, so give it a try!

- To cook the quinoa, combine it in a pot with the filtered water. Bring to a boil, then lower to a simmer and cook on low until all of the water is absorbed, about 12-15 minutes. Remove from heat and place in the refrigerator to cool.
- Once the quinoa has cooled, combine it with the strawberries, avocado, herbs, lemon juice, olive oil and sea salt in a bowl, and mix until combined.
