Strawberry Chia Pudding

If you are looking for a healthy, quick and easy to make dessert, give chia pudding a try!  It is packed with fiber, protein and heart healthy omega 3 oils.  Not only that, it requires no cooking so it is ready pretty quick.  The recipe I am sharing with you today is completely fruit sweetened, because it is packed with strawberries, and has dates included for extra sweetness. Also, it is vegan because I use coconut milk in place of dairy, but you would never know!  Although this is a healthy dessert, it reminds me of a sweet strawberry tapioca pudding!

  1. Place the coconut milk, strawberries, dates, sea salt and vanilla in a high speed blender and blend until smooth. Whisk in the chia seeds, and let sit 15 minutes.
  2. Spoon into bowls, top with strawberries and enjoy!
