Strawberry Lemon Kale Salad

This kale salad is easy to make, packed with nutrition and delicious! It features kale and fresh berries with crunchy pistachios in a light tangy lemon dressing!  It makes the perfect side dish for a protein for a light meal.  You can even make it a day ahead of time, and it tastes even better!

  1. In a large bowl, combine the kale, lemon juice and zest, avocado oil, maple syrup, and sea salt, and massage kale with hands until all of the ingredients have coated it, and it has softened a little.
  2. Add the strawberries, shallots, and pistachios, and toss with the kale until everything is evenly distributed.
  3. Serve!
