Strawberry Rhubarb Dressing
This strawberry rhubarb dressing adds flavor to any spring or summer salad! It is good with any greens, and pairs especially well with berries or any type of fruit. My favorite combination of salad ingredients to drizzle it over are arugula, berries, and pistachios but feel free to be creative!

- In a small saucepan, cook the strawberries, rhubarb and water over medium heat, with the pan covered, stirring often until the fruit is starting to break up. This will take about 7-10 minutes. Remove from heat and let cool.
- Add the fruit to a blender along with all other ingredients, and blend until smooth.
- Transfer to a jar or salad dressing container and store in the refrigerator for up to 1 week.
