Strawberry Rhubarb Lemonade
Strawberries and rhubarb as a combination are a Minnesota staple. Especially in pie. But did you know they make a delicious lemonade as well? The tart rhubarb is perfect with the tart lemon and sweet strawberries, and so refreshing on a hot summer day. The recipe I am sharing with you today is simple, comes together in 5 minutes and so delicious. It makes 2 large drinks, but if you want to make a pitcher, simply double the recipe and mix it in there. Trust me, you will feel like you are at a fancy restaurant if you make these!

Puree the strawberries and rhubarb in a blender with the maple syrup until smooth. Place ice cubes into the bottoms of 2 glasses. Add strawberries and rhubarb mixture, lemon juice, and water to each and stir until blended. Garnish with fresh mint.
