Summer BBQ Kale Salad

BBQ sauce is great on protein, but have you ever thought of using it as a sweet salad dressing?  The salad I am sharing with you does just that.  But I make my own sauce that is not too sweet and low in fat with sun dried tomatoes to intensify the flavor.  I use kale as the greens to pack a nutritional punch and hold up well to the flavorful dressing.  I add in some corn and tomatoes which are at their best this time of the year!  This salad is wonderful as a side dish at a summer get together and it holds up well so you can make it a day ahead of time.

In a high speed blender or food processor, combine all dressing ingredients and puree until smooth (add a little water if too thick). In a large bowl, combine all remaining ingredients, then pour the dressing over and massage in with your hands until it is well coated. Serve!
