Summer Berry Kale Salad
When deciding what to serve at a summer picnic I think about two things, taste and color, and of course the ability to hold up. Often times I end up making things the night before. This Summer Berry Kale Salad is all of those things plus a green salad packed with nutrition! I combine the kale with a simple light flavorful lemony dressing; add berries for color and sweetness, some sweet corn (it is so delicious this time of the year), and some crunchy pecans for texture. I have ate a whole bowl of this salad for dinner, but it is wonderful as a side dish at a picnic alongside a protein or combined with other hearty salads; it is on the lighter side.

In a small bowl, whisk together the lemon juice, zest, vinegar, maple syrup, olive oil, and sea salt until well combined. Place the kale in a large bowl and pour the dressing over. Massage the dressing into the kale with your hands until it is all coated. Add the basil, berries, corn and pecans and toss to combine. Serve!
