Summer Peach Strawberry Spinach Salad
Summer fruit can be used for more than just desserts and snacking, it makes a wonderful addition to savory salads as well! The recipe I am sharing with you today uses peaches not just in the salad, but in the dressing as well, which happens to be oil free and packed with flavor. I combine the peaches with fresh strawberries, beets, carrots and spinach and it is not only colorful, but loaded with antioxidants and nutrients. The dressing contains chia seeds and flax seeds too, which are great for heart health. This salad is great served with some grilled tofu or tempeh for a light and healthy meal!

- In a food processor, combine the 1 1/2 cups peaches, lemon juice, sea salt, and puree until smooth.
- Stir in the chia seeds and hemp seeds and set aside.
- In a large bowl combine all other ingredients, then pour the dressing over and toss to coat.
- Sprinkle with additional hemp seeds and serve!
