Summer Tomato Salad

Nothing beats fresh local tomatoes in the summer. Fresh and Natural Foods carries local tomatoes that are super flavorful and juicy.  One of my favorite summer salads before I became a vegan was caprese salad: fresh tomatoes, basil, and mozzarella.  I thought I would be missing out on it, but then I discovered macadamia chevre.  It is not the same as mozzarella because it has more of the consistency of goat cheese but it is even more delicious in my opinion.  The creaminess of the nut cheese plays well with the slightly tart tomatoes and lemon vinaigrette I like to drizzle over it.  It is a simple salad, but so good!  Even though it is vegan, if you served it to non-vegans they would enjoy it too, and be asking you where you got your chevre.

To make nut cheese, combine the macadamias, lemon juice, and sea salt in a high speed blender or food processor and process until smooth (adding about 1-2 Tbsp filtered water if necessary to make it a chevre like consistency). Remove from the food processor and place in a piece of double layer cheesecloth (tucked in on the bottom to form a ball). Place in a bowl in the fridge and let sit overnight.

To make the salad, arrange the tomatoes decoratively on 4 plates, then break off pieces of the nut chevre and scatter them over each. tear the basil leaves and scatter them over the salads.

Then, whisk together the dressing ingredients until smooth, and drizzle over each salad. Serve at room temperature.
