Sweet Broccoli Slaw
Broccoli is a commonly used ingredient, but what we do not often realize is the value of the stock along with the flowrettes. They too are delicious and sweet! Broccoli slaw is a wonderful way to use tender stalks! There are many broccoli salads out there with a mayonnaise based sweet dressing, which are delicious but not so much vegan or dairy free. So, I thought that I would create one that tasted just as good. I made a simple creamy cashew dressing with poppy seeds; it was delicious with the added sweet broccoli and carrots! It would be a perfect side for a picnic, but not as heavy as the usual broccoli salads.

In a large bowl, combine the broccoli, carrots, raisins, and sunflower seeds.
To make the dressing, combine all ingredients in the food processor except poppy seeds, and puree until smooth. Add the poppy seeds and stir into the veggies in the bowl. Serve!
