Sweet Corn and Cherry Salad with Mint
Cooling salads are just the thing for Summer picnics and cookouts! It is nice also when they are easy to make and don’t heat up the oven but still taste amazing. The recipe I am sharing with you today is all of those things! It is a Sweet Corn and Cherry Salad with fresh mint, and it may sound like an out of the ordinary combination but it is delicious! It comes together in 15 minutes or less, and it would be the perfect thing to serve alongside your protein for Father’s Day! It goes well with just about anything grilled. - Pit the cherries, and place them in a large bowl.
- Remove the kernals from the corn cobs and place the kernals in the bowl with the cherries.
- Add the mint, jalapeno, lemon juice, avocado oil, and sea salt, and toss together until well blended.
