Sweet Corn Kohlrabi Slaw

Fresh sweet corn is one of my favorite foods in the Summer!  I try to always buy local and organic corn though to be sure it has not been genetically modified.  Sweet corn is of course good grilled or boiled, but I like it even more raw!  It is super sweet and goes wonderfully in salads.  The salad I am sharing with you today contains the sweet corn, but it also contains a veggie not so familiar, kohlrabi!  It is something that my Great Grandma used to grow in her garden, and it is delicious.  I think this veggie does not get enough attention sometimes, but it should!  Because it is a member of the cabbage family, and is packed full of nutrients and antioxidants.  This salad is a full meal, because I use hemp seeds in the dressing which contain a lot of protein and heart healthy omega 3 oils.  So with that, the corn as the starch, and the kohlrabi as the vegetable (and a few more added), it is very balanced.  Not only that, this salad tastes good and the dressing tastes rich but it is very good for you!  Now that you can’t beat, something that is healthy and delicious!

Instructions

For the dressing, combine all ingredients in a high speed blender and blend until smooth. Set aside. Combine all the slaw veggies in a large bowl and toss with the dressing. Sprinkle with hemp seeds and serve!
