Thai Peanut Broccoli Salad

If you are looking for a new way to enjoy broccoli, give this salad a try!  It has a creamy peanut dressing with a little bit of a kick, crunchy peanuts and colorful carrots and red bell pepper. It is easy to make and so good!  Perfect for making ahead of time to use in lunches!

  1. Combine all of the veggies and the peanuts in a bowl.
  2. Whisk together the dressing ingredients in a bowl until smooth (adding a little more water if it is too thick).
  3. Pour the dressing over the salad and mix together until everything is evenly distributed with the dressing.
  4. Serve!
