Vegan Cheesy Garlic Smashed Potatoes

If you are looking for a flavorful, satisfying and delicious side dish or snack, these smashed potatoes fit the bill!  These are so delicious, they are crispy on the outside, soft on the inside, and they have a cheesy flavor but they are vegan and gluten free!  These are wonderful dipped in hummus as a healthy snack!

  1. Add the potatoes to a medium sized pot, cover then with filtered water, and bring it to a boil.  Lower to a simmer and cook the potatoes until they are tender when pierced with a fork about 10-15 minutes.
  2. When they are done cooking, drain them well, toss them with the olive oil, sea salt, garlic powder, and pepper.
  3. Sprinkle half the nutritional yeast onto an oiled sheet pan, then pour the potatoes onto it, and smash them down with the flat back of a wooden spoon to 1/4 inch thick.  Sprinkle with the rest of the nutritional yeast.
  4. Bake in the oven at 375F until golden and crispy, about 20 minutes.
  5. Enjoy!
