Vegan Cheesy Garlic Smashed Potatoes

These are so delicious, they are crispy on the outside, soft on the inside, and they have a cheesy flavor but they are vegan and gluten free! These are wonderful dipped in hummus as a healthy snack!

- Add the potatoes to a medium sized pot, cover then with filtered water, and bring it to a boil. Lower to a simmer and cook the potatoes until they are tender when pierced with a fork about 10-15 minutes.
- When they are done cooking, drain them well, toss them with the olive oil, sea salt, garlic powder, and pepper.
- Sprinkle half the nutritional yeast onto an oiled sheet pan, then pour the potatoes onto it, and smash them down with the flat back of a wooden spoon to 1/4 inch thick. Sprinkle with the rest of the nutritional yeast.
- Bake in the oven at 375F until golden and crispy, about 20 minutes.
