Vegan French Toast Casserole
In my family growing up, we always made delicious things for Easter brunch. I like to still keep that tradition, and one of my favorite things to include is Vegan French Toast Casserole! It is really easy to make and so delicious! You would never guess it is vegan or contains no eggs or dairy since it tastes just like traditional french toast casserole!

Instructions:
1. Preheat the oven to 375F degrees, and oil a 3 quart baking dish.
2. In a bowl, whisk together the Just Egg, milk, maple syrup, salt, cinnamon and vanilla, then add the bread and toss to coat in the mixture. Let sit for 15 minutes to soak up the liquid, stirring a few times.
3. Transfer mixture to the prepared baking dish, (including the liquid, pour it over).
4. Sprinkle with the sugar and sprinkle with a little cinnamon. Place dish in the oven on a tray, and bake for 45 minutes, or until the top is starting to brown and the liquid has absorbed and baked into the casserole at the bottom.
5. Remove from oven. Let cool 10 minutes, drizzle with a little maple syrup if desired and enjoy!
