Vegan Garlic Mashed Potatoes

Many people think that mashed potatoes need to be loaded with dairy to be delicious, but did you know that vegan ones can be just as satisfying?  These mashed potatoes are really easy to make and so good!  You would never guess that they are vegan!  If you don’t prefer the garlic and green onions, just leave them out to make plain vegan mashed potatoes.

  1. Place the potatoes in a large pot with enough filtered water to cover them, with about 1 tsp sea salt, and bring to a boil. Lower to a simmer and cook for about 10 minutes until tender when pierced with a fork.
  2. Meanwhile, sautee the garlic and green onion in the olive oil over medium heat in a small pan until just fragrant and softened, stirring constantly.  It takes about 3 minutes after it has heated up.  Remove from heat.
  3. Drain the potatoes once cooked, and either send through a ricer into a bowl, or place them in a bowl and mash. Add the garlic, vegan butter, milk, about 1/2 tsp sea salt and mix until fluffy (adding more liquid if needed). Taste to see if more salt is needed, and if so sprinkle in a little more.
  4. Serve!
