Vegan Hot Chocolate Mix

There is nothing like a warm mug of hot chocolate on a cold Winter day!  So I like to make my own hot chocolate mix to have on hand.  Most store bought ones contain dairy, but in this one I use coconut milk powder instead of milk powder to keep this one plant based. It is really delicious, and also good for gifting!

Instructions

  1. Whisk together all ingredients but the marshmallow in a large bowl until all clumps are gone.
  2. Mix in the marshmallows.
  3. Pour into 3 16 oz jars and put the lids on.
  4. To make hot chocolate, mix together 1/2 cup boiling water, and 1/2 cup of the hot chocolate mix in a mug, stir and enjoy!

Keeps for up to 6 months in a cool dry place.
