Vegan Hot Chocolate Mix
There is nothing like a warm mug of hot chocolate on a cold Winter day! So I like to make my own hot chocolate mix to have on hand. Most store bought ones contain dairy, but in this one I use coconut milk powder instead of milk powder to keep this one plant based. It is really delicious, and also good for gifting!

- Whisk together all ingredients but the marshmallow in a large bowl until all clumps are gone.
- Mix in the marshmallows.
- Pour into 3 16 oz jars and put the lids on.
- To make hot chocolate, mix together 1/2 cup boiling water, and 1/2 cup of the hot chocolate mix in a mug, stir and enjoy!
Keeps for up to 6 months in a cool dry place.
