Vegan Mango Lassi

One of my favorite healthy summer treats for when the mangoes are at their best and we all want something refreshing to sip on, is a mango lassi.  Traditionally they are made with dairy yogurt, but I like to make mine with coconut yogurt to keep it vegan.  Just a little lime juice, fresh mangoes and a touch of maple syrup and you have something that tastes like dessert, but is actually good for you.  Mangoes are packed with vitamin A and C so you are getting some of your vitamins in as well!

  2. Pour into 2 glasses, and enjoy!
