Vegan Mexican Corn Salad

If you are looking for a flavorful, easy to make salad to serve at your next summer picnic, give this one a try! If features sweet corn and all of the flavors of Mexican street corn but in salad form.  It also happens to be dairy free, vegan and gluten free but you would never know by tasting it, since it is so delicious!

  1. In a large bowl, combine the vegetables and feta.
  2. Whisk together the dressing ingredients, and toss with the veggies and cheese until well combined.
  3. Serve!
