Vegan Mozzarella Blackberry Basil Bites

Tomato, basil and mozzarella are a popular summer combination for a salad or skewers, but did you know fruit, mozzarella and basil can be just as delicious together?  I especially love berries as the fruit in that combination. I used to be a big fan of mozzarella, so I have figured out a way to veganize it so I can still enjoy it!  The recipe is gluten free as well as dairy free and nut free, so it is safe for those with allergies as well.  It is wonderful on vegan pizza as it melts beautifully unlike some non-dairy cheeses.  One simple recipe is to serve the cubes of mozzarella with a basil leaf and a blackberry for a delicious little snack that is perfect at a party  (if you are not dairy free, you may use regular mozzarella as if you prefer).

To make the cheese, heat the coconut milk in a saucepan, until it comes to a simmer.Meanwhile, dissolve the arrowroot starch in the water and set aside.Once the coconut milk has come to a simmer, add the agar flakes, and heat until they are dissolved (mine took about 8 minutes, if you are using the powder, it should dissolve within one minute).Next, add the lemon juice and sea salt to the coconut milk.Mix the coconut oil with the guar gum so that the guar gum does not clump up.Turn off the heat and add the arrowroot mixture, guar gum and coconut oil. Whisk for about 30 seconds, then pour into a silicone mold. Refrigerate for a few hours until firm, then pop out of the molds.To make the skewers, take a piece of cheese, put a basil leaf over that, then a blackberry. Put a toothpick down the center to hold it in place.
