Vegan Mozzarella Pepper Roll Ups
If you are looking for a festive, easy and delicious vegan appetizer for the Holidays, these pepper rolls are an awesome option! They comes together in about 15 minutes, look impressive and you would never even guess that they are vegan because the cheese I use, Miyoko’s kitchen mozzarella tastes like dairy cheese! These also happen to be gluten free as an added bonus!

- Lay out the pepper strips on a cutting board or flat tray.
- In a bowl, mix together the mozzarella cheese, garlic clove and milk until smooth and softer (you can add another Tbsp milk if you think it is not spreadable enough).
- Spread some of the cheese onto each pepper strip, then roll them up from the larger end to the smaller and secure with a toothpick.
- Arrange on a tray, drizzle with olive oil, and sprinkle with the thyme.
