Veggie Fried Rice

If you have leftover rice, and are looking for something quick and easy to make for dinner, veggie fried rice is a great option!  It comes together in about 15 minutes, is filled with veggies and fiber and I add in a bit of baked tofu for protein!

Instructions:

  1. Add 1 Tbsp oil to a pan over medium heat, along with the garlic, ginger, and scallions.  Sautee for a minute until fragrant.  Add the carrot, peas and mushrooms and sautee until softened, about 5 minutes.
  2. Mix together the miso, and tamari in a small bowl, and add to the pan, along with the rice. Cook and stir together until the rice is uniform in color.  Add the tofu to the pan and stir to incorporate.
  3. Serve!
