Winter Beet Stew
This Winter Beet Stew is warming, packed with healthy vegetables and delicious! It is easy to make, and a good sized batch so you can enjoy it for dinner for a few days. It gets even more flavorful the next day if you are enjoying the leftovers!

1. In a large soup pot, combine all ingredients but the potatoes and bring to a boil. Lower to a simmer and cook about 25 minutes until the beets are tender.
2. Add the potatoes, and cook another 10-15 minutes until they are tender.
3. Remove soup from heat and serve!
