Winter Chopped Kale Salad

Just because it is winter, does not mean you can’t enjoy veggie packed salads!  We could all use a bit more vitamins from our food this time of the year, which is why I like to make things like this Chopped Kale Salad!  It is easy to make, but packed with nutrients, and so delicious!  I like to make a batch, then eat it in my lunches I take to work for the week with some edamame or tofu served on top for more protein!

  1. Combine the kale, cabbage, broccoli, onions, pomegranate and pecans in a bowl.
  2. Whisk together the dressing ingredients in another bowl, then pour over the salad and mix it together until the dressing has coated all of it.
  3. Serve!
