Winter Citrus Slaw
Citrus is at its peak this time of the year, so why not enjoy it! Although it is great to snack on citrus as a healthy dessert, I like to add it to savory items too! Like the Winter Citrus Slaw I am sharing with you today. I use kumquats, lemons, and oranges in this slaw to give it loads of fresh aromatic flavor. It is colorful, healthy, and delicious. It is a great side dish with protein (I like it with sautéed tempeh or grilled tofu) for a light lunch. I make a big batch on the weekend, and this becomes my part of lunch during the week.
