German Chocolate Chia Pudding

In the summer it is always nice to have desserts that don’t heat up the house to make.  Ice cream is good, but if you want to go a bit healthier route, chia pudding is a great option!  It has a texture similar to tapioca pudding, but doesn’t require any cooking and the chia seeds give you a good nutritional bang for your buck!  This one has all of the flavors of German chocolate cake, but it is much better for you. Also, it is delicious and easy to make!

Spanish Potato Salad

I love a good potato salad in the summer!  But sometimes I like to switch it up and make something with a non-mayo based dressing. This potato salad has a light flavorful dressing with a bit of spice, and colorful veggies.  It is the perfect side dish for a summer picnic!

Blackberry Basil Ginger Smoothie

A smoothie is the perfect breakfast to enjoy on a hot summer day when you don’t have a lot of extra time in the morning. This one is packed with fresh flavors of this season, with sweet blackberries, fresh basil, and anti-inflammatory ginger which gives it a little kick!  I add in some protein powder to make it a bit more substantial, but you can leave it out if you want it to be more of a snack than a meal. This is really delicious and good for you as well!

Baked Peaches

Peaches are at their best and most flavorful this time of year, so I love using them in desserts!  These baked peaches are really easy to make, and they are kind of like a peach crumble except you have your own individual peach baked to tender perfection and there is no need to slice it up!  These are so good served with some vegan whipped cream or vegan ice cream warm from the oven!

Tempeh is an ingredient that you may not know how to cook, I know I didn’t when I first heard of it years ago.  But it is a delicious and healthy source of protein when prepared properly!  This Thai Peanut Tempeh Sautee comes together in under 20 minutes and it is great for serving on top of a salad, or with rice and steamed veggies with the extra sauce for drizzling!

Ginger Beet Sauerkraut

I love sauerkraut!  I used to always buy it at the store, but I decided to start making my own a while back and it is so easy and kind of fun, because you can add your own flavors to it!  One of my favorites is to combine red cabbage and beets, like in this recipe here.  I add ginger and garlic to give it loads of flavor, and it is good on sandwiches, as a side dish, on top of salads or Buddha bowls, or just to snack on!

Blueberry Sweet Corn Salad

Blueberries and sweet corn scream summer!  I love them together in something like a blueberry cornmeal cake or corn cakes, but I like them together in a salad as well, like this simple easy to make salad!  It is only 5 ingredients, comes together in a few minutes and it is so refreshing and delicious! It is even good made ahead of time to bring to a picnic or gathering the next day.

Stone Fruit Salsa

In the summer, I love a good fruit salsa!  Although mangoes and pineapple are used often, I like to switch it up a bit and use things like stone fruits sometimes. Peaches, nectarines, apricots and pluots go into this delicious salsa!  It has a bit of a kick to it, and it goes perfect with corn chips, spooned over salads, or over things like grilled tofu or tempeh!

Roasted Sweet Potato Tacos

Tacos are one of my favorite things to make in the Summer!  There is nothing like enjoying some spicy tacos and enjoying a refreshing margarita on the patio!  These ones contain sweet and savory sweet potatoes roasted to bring out their flavor, along with black beans and our special salsa for a delicious combination!  These make for a healthy, flavorful and satisfying vegan summer meal!
